Ingredients

  • 4 unit Boneless skinless chicken breasts or thighs
  • 1 unit Chipotle peppers in adobo sauce
  • ½ cup Greek yogurt or mayo
  • 2 unit Garlic cloves
  • 2 tbsp Lime juice
  • 1 tbsp Paprika
  • 1 tsp Cumin
  • Salt & pepper to taste
  • 4 unit Whole wheat sandwich buns brioche, or sourdough
  • 4 units Lettuce leaves
  • 4 unit Tomato slices
  • 1 unit small red onion, sliced
  • 1 unit Avocado, sliced
  • 4 unit Cheddar or pepper jack cheese slices
  • Pickled jalapeños optional (To taste)
  • Cilantro optional
  • 1 tbsp Honey optional

Instructions

  • Prepare the marinade: Blend chipotle peppers, Greek yogurt or mayo, garlic, lime juice, paprika, cumin, salt, and pepper until smooth.
    1 unit Chipotle peppers in adobo sauce, ½ cup Greek yogurt or mayo, 2 unit Garlic cloves, 2 tbsp Lime juice, 1 tbsp Paprika, 1 tsp Cumin, Salt & pepper
  • Marinate the chicken: Coat the chicken with the marinade and let it soak for at least 30 minutes (overnight for better flavor).
    4 unit Boneless skinless chicken breasts or thighs
  • Cook the chicken: Grill, pan-sear, or bake the chicken until it reaches an internal temperature of 165°F (74°C).
  • Toast the buns: Lightly butter the sandwich buns and toast them until golden and crispy.

  • Assemble the sandwich: Spread some chipotle sauce on the bottom bun, then add lettuce, chicken, cheese, tomato slices, onion, and avocado. Top with the other bun.

  • Serve: Add pickled jalapeños and cilantro (optional) for extra flavor. Serve with sides like sweet potato fries or coleslaw.
